Evening with winemaker – Pavel Springer
On Wednesday, March 11, 2026, we will welcome Mr. Pavel Springer from Springer Winery! Wines from his family-run winery will be paired with a special tasting menu created by our head chef Sváťa Hemmer and his team. We will publish the menu here as soon as it is ready.
Mr. Springer has a long-standing history of producing excellent wines, which you may already know from our wine list, but on this evening he will personally present them and gladly share stories about his winery and their lifelong dedication to winemaking.

A small, truly family-owned winery with roots dating back to 1807, established in 1807. Pavel Springer continues the legacy of many generations before him. Together with his wife Naďa and their sons Pavel and Adam, he manages 5 hectares of their own vineyards located in the Čtvrtě and Skale plots. Gentle, sustainable vineyard cultivation and strict grape yield reduction are a natural part of their philosophy.

Their entire production carries a distinctive and unmistakable character. The best wines are labeled “Family Reserve”– the wines are neither fined nor filtered. The flagship cuvées of the winery are SKALE (pronounced “skale”) and CHASY (pronounced “shasy”).
